I must admit at the end of the 30 day challenge I felt a little lost, like something fantastic was coming to an end. I woke up the first morning thinking about what I was going to make, almost took a photo of my breakfast for the blog and then realized I didn't need to. I thought a lifetime of blogging pictures of my meals may get tiresome for me and the people having to read about it
Having said that, I loved reading Georgianne's blog nightly, and the 2 Girls and a Cat (Kimberly and Bay) always have such amazing photos. I looked forward to Adrianne's smoothie and juice each morning and it was just nice to feel this connection with everyone.
I've decided to keep my blog going, but will only update it when I have something amazing to say...so it might be weeks before you hear from me again
I've also decided to turn it into a more general blog about my life, running, training for my ultra and any other things that are related to me living a good, healthy life.
I have so far continued following my new approach to meal planning and eating. I picked out a few recipes for this week and am still eating a vegan diet. I really don't miss having meat or eggs in my diet, and dairy was cut out long ago. I've been 95% gluten free for the last several years, so this is an easily maintained lifestyle for me.
So, I'm debating about the video submission for the YU30 challenge. I didn't sign up for it to win any of the prizes, although they would be nice. I am just wondering what I have to say that I haven't already said in this blog. I am going to ponder today and try to seriously think about an approach. If I decide to submit a video I will probably have it done by the end of the day Saturday.
For those of you curious about my seedlings, everything is growing and my mother said I have started things way too early! Mother's always know best. My nasturians have about 3 leaves on them and are about 6 inches tall! I will soon have to transplant and may have to turn the upstairs of my house into a makeshift green house until the plants can be moved outdoors. I promise photos of my seedlings will be forthcoming.
Now I'm off to start another day!
